The Ethanol Technology Institute was established by Lallemand Biofuels & Distilled Spirits to provide the highest quality education to the biofuels and distilled spirits industry.
The institute is home to The Alcohol School, hosts the BFA – Biofuels Academy, and offers customized training and other events that promote knowledge sharing in the sector.

Research Scientist at Mascoma LLC
Carlos Calcines-Cruz is a Research Scientist at Mascoma, where he leads a team specializing in enzyme expression pipelines: from molecule discovery, semi- and fully rational protein design to precision fermentation. He holds a BSc in Biology from the University of Havana, Cuba, and both a MSc and PhD in Biochemistry from the National Autonomous University of Mexico. At Lallemand, he focuses his passion for problem-solving on developing enzymes for industrial applications like baking and biofuels.
Technology & Innovation Manager at LBDS South America
A biotechnology professional with over thirty years of experience in the enzyme and yeast segment for grain ethanol production. Eder holds a degree in Pharmaceutical Biochemistry from UFPR (Federal University of Paraná), with postgraduate qualifications in Biotechnology from PUC-PR (Pontifical Catholic University of Paraná) and in Natural Products Chemistry from UFPR (Federal University of Paraná), and an MBA in Data Science from FIA (Fundação Instituto de Administração, São Paulo). For the past 18 years, he has provided technical services for corn-based ethanol production, with an emphasis on optimizing fermentation processes, including the application of statistical techniques and data analysis.
Associate Scientist - Fermentation/Molecular Biology at Mascoma LLC
Morgan graduated from Keene State College (2020) with a BS in Chemistry and a BA in Biology. She currently works at Mascoma LLC as part of the analytical laboratory team, with a primary focus on carbohydrates and their role in biofuels. She has experience with SEC, MALDI-TOF, GC-MS, and assay development. In addition to her role in the analytical department, Morgan also dedicates time to the microbiology lab, where she established Quality Control (QC) for the Animal Nutrition division of Lallemand, Mascoma’s parent company.
Sugarcane Applications Manager at LBDS South America
Elisa holds a degree in Biological Sciences from the Methodist University of Piracicaba, with a specialization in Biotechnology and Bioprocesses, emphasizing Industrial and Fermentation Microbiology, from the State University of Maringá. With over 10 years of experience in the Sugarcane and Ethanol sector, Elisa manages LBDS’s technical team, focusing on the application, monitoring, and optimization of industrial processes in sugarcane biorefineries.
General Manager of Lactic Solutions at LBDS North America
Jim Steele is the General Manager of the Lactic Solutions Product Group within Lallemand Biofuels & Distilled Spirits (LBDS). Before joining LBDS in 2017, he was Professor of Food Fermentations at the University of Wisconsin-Madison for twenty-nine years. Additionally, co-founded and was the Chief Executive Officer of Lactic Solutions Inc. He has published more than 100 refereed research articles, 18 book chapters, and 2 books on industrial fermentations. He received his BS in Microbiology, MS in Food Science and PhD in Genetics from the University of Minnesota.
Sales Executive at LBDS South America
A professional with over 15 years of experience in Biotechnology, specializing in the development and application of enzymes and yeast for biofuel production from sugarcane and grains. He holds a Bachelor’s degree in Biotechnology from Unesp, a Master’s degree in Chemical Engineering from USP, an MBA in Environmental Management and Technology from USP, and a PhD in Biofuels from Unicamp. Currently, he is active in the commercial sector for grain ethanol.
